Making dough can be intimating and time-consuming, however, this Spelt Flour Yoghurt Dough is quick and easy to make and only requires a few ingredients.

Wholemeal spelt four is used to make this dough. It’s a flour of choice in our household as it’s rich in fibre and easily digestible. The flavour is slightly nutty and sweet which makes it versatile for sweet or savoury baking.

I tend to use this to make savoury pizza scrolls for lunchboxes and energy-boosting snacks. Although, it can be used in a variety of ways and flavoured to your child’s liking.

Try this Spelt Flour Yoghurt Dough to make pizza bases, scrolls or flatbreads. Experiment with it to make calzones or play with sweet flavours.

Spelt Flour Yoghurt Dough

To make the Spelt Flour Yoghurt dough, simply mix together spelt flour, baking powder and salt in a large bowl.

Add Greek yoghurt and apple cider vinegar and combine with a spoon until it comes together crumbly-like texture. Working with clean hands, mix the dough into ball and turn out on a floured surface.

Knead the dough for about 30 seconds until it isn’t sticky anymore. If you need to, you can adjust with a little extra flour.

Now roll out into your desired shape and thickness and bake as per the instructions of your chosen recipe.

If you want to make green Spelt Flour Yoghurt Dough and increase the vegetable content, I add one cup of baby spinach leaves in a blender with the yoghurt and blitz until smooth. It doesn’t add any flavour, just another element of green to your dish.

Spelt Flour Yoghurt Dough

Ingredients:

  • 1 1/2 cups of wholemeal spelt flour + extra for dustimg
  • 1 cup of plain Greek yoghurt
  • 1 tsp baking powder
  • 1 tsp apple cider vinegar
  • 1/4 tsp sea salt
  • Optional - dried herbs, spices, spinach (see note)

Instructions:

  1. In a bowl, add the wholemeal spelt flour, baking powder and sea salt. Mix to combine.
  2. Add the Greek yoghurt and apple cider vingear. Stir until it comes to together and resembles a crumbled texture.
  3. Using clean hands, work the dough until it forms a ball and turn it out onto a flour-dusted surface.
  4. Knead gently for about 30 seconds.
  5. Roll the dough into the desired shape and thickness, and bake according to your chosen recipe.

Note: You can flavour this dough up according to your recipe or tastes. Try ground spices like cumin, cinammon or corinader, or use dried herbs like oregano.

For green dough, add 1 cup of baby spinach leaves and the yoghurt into a blender and blitz until well combined. Follow the remaining steps in the recipe. You may need to adjust with a little extra flour if too wet.
