This easy zucchini slice can be whipped up in no time and is so versatile. Cut it in finger slices for toddlers or larger slices for lunch box additions.

Slices can be a great way to increase the amount of veggies your child consumes and to introduce them to new flavours. Zucchini is a relatively plain flavoured vegetable so it’s the perfect one for those fussy eaters. It’s also one of the more affordable and the reduced cost “odd bunches” are ideal for this slice recipe.

The key for this Easy Zucchini Slice is to make sure you squeeze out as much liquid as possible. A wet slice isn’t very desirable and if you’re planning on freezing them, the consistency once defrosted isn’t all that appealing.

For a vegetarian option, simply omit the bacon. Maybe swap it for some mushrooms instead to increase the nutrients and enhance the texture of the slice.

This Easy Zucchini Slice can be cut into finger slices for little hands or larger slices for older kids and parents. Pair it with veggies or salad and you have yourself a meal. Serve it warm or cold in a lunchbox. One recipe, plenty of options.

I’ve left the recipe relatively plain. Don’t be afraid to play with flavours. Throw in some ground turmeric or paprika, use different herbs such as chives in place for parsley. Change up the veggies where you like, slowly introducing new options to your child.

Easy Zucchini Slice

Prep time: 15 mins | Bake time: 20-25 mins


Ingredients:

  • 400g zucchini
  • 80g grated cheese (or 2 tbsp nutritional yeast)
  • 100g free range bacon, diced
  • 1/2 brown onion, diced
  • 1 cup spelt flour (or gluten free flour)
  • 2 tbsp parsley
  • 5 eggs
  • 1 tbsp olive oil

Instructions:

  1. Preheat the oven to 180°C and line a baking dish with paper.
  2. Grate the zucchini before wrapping it in a clean tea towel and squeezing out any excess liquid.
  3. Place in a large bowl and set aside.
  4. Heat olive oil a frying pan over medium heat. Add the diced bacon and onion and cook until lightly browned.
  5. Add the cooked bacon and onion into the bowl with zucchini. Mix in the cheese (or nutritional yeast), flour and parsley.
  6. Add the eggs and mix well until combined.
  7. Pour the zucchini slice mixture into your prepared baking dish and place in the oven.
  8. Bake for 20-25 minutes or until lightly golden. Allow to cool before slicing into your desired size.
  9. Store refrigerated in an airtight container 3-4 days or freeze for up to 1 month.

Note: This easy zucchini slice is the perfect way to play with herbs and spices introducing new flavours to your child. Try adding chives, turmeric, paprika, curry powder to the mix. For a vegetarian option, use mushrooms in place of bacon.
