This summer my son has had his fair share of ice creams and while I don’t mind him enjoying a creamy, sweet treat every now and then, there comes a time where I have to draw the line.

But rather than deprive him of a refreshing treat, we make our own healthy icy poles and icecreams out of just a few ingredients.

Mango Pineapple Healthy Icy Poles

These Mango Pineapple Healthy Icy Poles are the perfect way to use up overripe fruit and make a delicious afternoon snack. With no added nasties or sugar, you won’t find your child climbing the walls followed by dramatic meltdowns.

The mango is deliciously sweet and creamy and the pineapple adds just a touch of sour. The addition of Greek yoghurt helps prevent the icy poles from becoming too icy.

To make the Mango Pineapple Healthy Icy Poles, simply dice up the fruit and throw it into a blender with the yoghurt. Blend until smooth and pour into moulds (I use the Ikea CHOSIGT moulds, however, I love the stainless steel moulds like these ones from Seed & Sprout). Keep in mind, the number of icey poles will depend on the size of your moulds.

Place in the freezer for 8 hours or overnight. To remove, run the mould under warm water until it loosens.

Mango Pineapple Healthy Icy Poles

Prep time: 5 mins | Freeze time: 8+ hours


Ingredients:

  • 1 cup ripe mango
  • 1 cup pineapple
  • 1/4 heaped cup Greek yoghurt

Instructions:

  1. Roughly dice the mango and pineapple.
  2. Place in a blender with the Greek yoghurt and blend until smooth.
  3. Pour into your icey pole moulds and freeze for 8 hours or overnight until set.
  4. To remove from the moulds, run under warm water.

Note: It's hard to go wrong when making healthy icy poles so play around with flavours. Try banana, berries, kiwi. Add cacao, vanilla, lime juice...the list of options goes on!
