Layered Raspberry and Coconut Gummies

Need a quick snack or treat for your little ones? Gelatine gummies are so quick to make and you can have a lot of fun with flavours and shapes.

You may have already tried our tropical Orange Gummies or the Blueberry and Coconut Gummies but the flavour possibilities are endless.

There are also lots of different moulds available from lego figures and snakes to flowers and geometric shapes. You can pick them up from your supermarket, cooking shops, Kmart or online from eBay at a relatively low cost.

Layered Raspberry and Coconut Gummies

In these Layered Raspberry and Coconut Gummies, we’ve added a few hidden ingredients just to boost the nutrients. Trust us, they still taste amazing and your little one won’t even notice!

These are also made to be firm so that they resemble more of a supermarket gummy than jelly and will hold up better in a lunch box.

Making the Layered Raspberry and Coconut Gummies is a two-step process (but don’t be fooled- it’s super easy)

Step 1

Add 4 tablespoons of Nutra Organics Gelatin Powder and 1/2 cup of water to a small bowl. Stir to combine and leave to bloom.

Meanwhile, heat 1 cup of coconut milk, 1 tsp vanilla extract and 1-2 tablespoons of maple syrup. Once warm, add the bloomed gelatin and whisk until it has dissolved.

Pour the coconut liquid into your desired moulds until it fills half and place in the freezer to set.

Step 2

Repeat the blooming in step 1 with 4 tablespoons of Nutra Organics Gelatin Powder and 1/2 cup of water.

In a blender, place 1 cup of raspberries, 1/2 cup of spinach, 1/2 cup of water and the juice of 1/2 an orange. Raspberries can be quite tart, so you can add 1 tablespoon of honey or maple syrup to take off the edge. Blend until smooth.

Optional step: pass the raspberries through a fine sieve to get rid of the pips - I don’t bother with this step!

Add the raspberry liquid to your pot and heat before whisking in the bloomed gelatin.

Remove your moulds from the freezer and top with the raspberry mix. Return to the fridge until set before placing them into a sealed container.

Layered Raspberry + Coconut Gummies

Prep time: 10 mins | Setting time: 1-2 hours

Ingredients:

Coconut layer

  • 4 tbsp Nutra Organics Gelatin
  • 1/2 cup water
  • 1 cup coconut milk
  • 1 tsp vanilla extract (or one vanilla pod)
  • 1-2 tbsp maple syrup

Raspberry layer

  • 4 tbsp Nutra Organics Gelatin
  • 1/2 cup water
  • 1 cup fresh raspberries
  • 1/2 cup spinach
  • 1/4 cup water
  • juice of half an orange

Instructions:

  1. To make the coconut layer, place the gelatin and water in a small bowl to bloom.
  2. Meanwhile, add the coconut milk, vanilla and maple syrup in a small pot. Heat over medium heat until warm.
  3. Add the bloomed gelatin to the coconut milk mixture and whisk until disolved.
  4. Pour into the mould just half way and place in the freezer to set.
  5. To make the raspberry layer, repeat the blooming of the gelatin.
  6. Place the raspberries, spinach, water and orange in a blender and blend until smooth.(Optional step: pass through the seive to remove the little seeds - I don't bother with this).
  7. Remove the moulds from the freezer. Top with the raspberry mixture. Return to the freezer if you want set quickly (within 20mins) or in the fridge to set for 1-2 hours.

Store in the fridge for up to 2 weeks.

Note: You can play with flavours. Strawberries or mango work well in this combo!).
